How to Make Candied Rose Petals


I made these to top some Ispahan cupcakes. But they are equally gorgeous on any other cake or cupcake. They are simple, easy to make, and pretty to look at. Edible too (not that they taste amazing though)!

What you will need:
Roses (about 2 large roses)
1 egg white
1 tsp. water
1 cup of sugar

1. First pick some pretty bloomed roses.
2. Remove the petals carefully, making sure to use the ones that are un-bruised and clean. Also, check for any bugs that have attached themselves to the petals. Lay the rose petals on a parchment paper lined baking sheet.

3. Add 1 teaspoon of water to 1 large egg white, whisk well. Using a pastry brush, cover the rose petals lightly with the egg wash and sprinkle with sugar immediately.
4. Lay back on the parchment paper and allow the rose petals to dry completely overnight for 24 hours. The rose petals will harden overnight and can be stored and safely used for up to 3 weeks. Enjoy!

  1. Wow - how cool is that? I wrote about candied violets a while back and discovered that you can (sometimes) buy them and other candied flower petals at Amazon. However, yours look much nicer - and goodness knows they are a tad less expensive. Great kitchen adventuring!

  4. You know, I really should be doing this! I have an arbor that is totally covered with blooms pink climbing roses starting mid-June. (and it's so much cheaper than purchasing candied roses!)

  6. Those are so beautiful! I made Ispahan cupcakes a few months ago but they were very different from yours. I'm definitely going to try to candy my own flower petals this summer.

  10. Hey, if one is desperate to finish in 5 hours, is it possible to put it in the freezer for a while?

  11. @ Anonymous: I don't think it would work because you want to dry out the egg whites and putting them in the freezer would just freeze them, then when you take them out, they'd defrost and rehydrate :(

    If you have a dehydrator, that could speed up the process. Or you could try putting them in a VERY LOW temp oven and letting it dry out. Hope this helps.
