Smores Oatmeal

I used to absolutely abhor oatmeal. The thought of it made me cringe and possibly invite gag reflexes as well. Today? Quite the opposite. I love it, so much so, that I've been eating it every single freaking day! Can you imagine? And I haven't gotten sick of it either. I know! I even surprise myself.
But it's probably for the better anyway, since oatmeal is so good for me. It's nice to know that I'm filling myself up with such a nutritious breakfast that also tastes delicious. I love finding new ways to eat my oatmeal, and this way is definitely a keeper. I know it's kind of decadent for breakfast, but what I do is take out all of the sugar from the oatmeal recipe since the marshmallows and chocolate provide enough sweetness. And you can put as little or as many toppings as you want; completely customizable!

Smores Baked Oatmeal
Yields: about 6 - 8 servings


1 recipe Baked Oatmeal, sans sugar
Mini Marshmallows
1 large bar Hershey's chocolate bar, broken into pieces

Prepare the oatmeal. Spoon one serving, about 1/2 a cup, into a small bowl. Top with desired amount of mini marshmallows and chocolate pieces. Using a blow torch, toast the marshmallows until browned. If you don't have a torch, set your oven to broil and broil for 5 - 8 minutes or until marshmallows are nice and toasty. Enjoy!

  5. I cannot believe my eyes. You've elevated oatmeal to new heights. Perhaps now I'll be wanting it for breakfast, lunch, dinner AND dessert. I am definitely making both the baked oatmeal recipe, as well as this take on it. Thanks for sharing!

  9. I used to abhor oatmeal, myself. Then I discovered steel cut oats. Completely different experience...fell in love. We eat ours with braeburn apples, cinnamon, graham cracker crumbs and organic apple butter. But THIS looks amazing. I'm pretty sure if I ever tried it, I'd never go back...So nice to meet you.

Great foodies think alike :P I totally have a oatmeal addiction and thought of making a s'mores oatmeal at one point - but have never actually attempted to make it (mostly because I eat my oatmeal as a healthy breakfast and a s'mores oatmeal defies exactly that :P but it looks fantastic!!:) and so now I *must* try it!!

  15. That looks quite decadent! It'd probably be easier getting up in the morning if I knew I could have s'mores for breakfast. Now that I think about it, I've never made baked oatmeal before... I've made it on the stove, in the microwave, and in my rice cooker, but never in the oven. Will have to try this out someday!

  18. Oh,my goodness! I can't wait to see the look on my children's faces when I tell them breakfast is ready and I place this in front of them. I will of course just tell them they are getting oatmeal and not S'MORES oatmeal so it will be even more surprising! :) This is going to elevate me to new heights. Thanks for sharing!

  24. I think it's neat how you can still see the Hershey's imprint on the hunks of chocolate! This looks awesome but I love any incarnation of s'mores. Cool idea.
