1 3/4 cups flour
1 cup graham cracker crumbs
1 tsp. baking soda
1 tsp. salt
1 cup/ 2 sticks unsalted butter, room temperature
3/4 cup sugar
3/4 cup light brown sugar
2 tsp. vanilla
2 eggs
2 cups miniature chocolate chips
1 1/2 cups mini marshmallows
2 regular Hershey bars, roughly chopped
In a stand mixer, combine the butter and sugars and mix until fluffy. Mix in the eggs and vanilla until combined. Add the flour, graham crackers, salt and baking soda and mix well. Stir in the chocolate chips then cover and refrigerate the dough for about one hour. Preheat oven to 375 F. Take a tablespoon of the dough, roll into a ball, and drop onto a greased baking sheet. Repeat with the rest of dough, leaving about 2 inches between each to allow it to spread. Bake for 6 minutes, then remove from the oven. Push a 3 - 5 marshmallows and a few pieces of a Hershey's bar into each cookie. Return to oven and bake for another 2 - 3 minutes until golden brown and the marshmallows are a bit toasted. Cool on a wire rack and enjoy!

ReplyDeleteI just love s'mores. I have never seen graham cracker crumbs or graham flour here in Australia. But I would eat graham crackers religiously when I lived in Boston. So delicious!
Tried them, & Loved them!! Needed lots more than 2 Hershey bars for the tops though....they looked great & tasted better, total baking time was more like 10 minutes; had agreat time baking them with my daughter, who took them back to college with her, thank God!

ReplyDeleteJust made em! Absolutely delicious, although a little flat, but that might have been because an unmarked tupperware container could have been flour or Bisquick... Still delicious either way! Thanks for the recipe!
ReplyDeleteI liked the taste of these, but the texture was a bit off. Like the above commenter said, they were too flat. Also, I only bought two Hersheys bars and I would have loved to have had another one. Still, I like the concept, and like any homemade cookies, they were gobbled up in no time flat.

ReplyDeleteJust baked these! I baked them for 6 minutes, topped them with 3.5 Hershey's bars and about 3 mini marshmallows each. I also only refrigerated the dough for about 20 minutes, not an hour. I had to add 4 minutes of bake time after I topped them, versus the 2 in the recipe. All in all, look delicious! Taste amazing. Texture is great. I will definitely make these again.
ReplyDeleteI made these cookies a few months ago, and I plan on making more today!!!!! They are by far my favorite cookie! Love the graham crackers inside the dough and the marshmallows melted on the top. DELISH!!!!
